Make sugar free jam using unsweetened berries and Equal. The recipes takes only minutes to make and will keep in your freezer up to 3 months or in the refrigerator up to 2 weeks.
4 cups fresh strawberries*
2 cups fresh raspberries*
1 cup fresh blueberries*
1 package (1-3/4 oz.) no -sugar-needed pectin
3/4 cup Equal® Granular
*May substitute frozen unsweetened berries (thawed)
Mash strawberries, raspberries and blueberries by hand or with a food processor to make 4 cups pulp. Stir in pectin; let mixture stand 10 minutes, stirring frequently.
Transfer to large saucepan. Cook and stir over medium heat until mixture comes to a boil. Boil and stir one minute more. Remove from heat. Stir in Equal. Skim off foam, if necessary.
Immediately fill four half-pint jars, leaving 1/2 inch headspace. Seal and let stand at room temperature several hours or until firm.
